Vanilla Chia Seed Pudding

Chia seed pudding is a rising trend in the healthy food world. I recently learned that what makes chia seeds so healthy for you is that they help “move stuff along” in your digestive system and lets face it, I’m sure we could all you a little bit of that!

This has become one of my new favorite snacks, especially when I’m craving something sweet but am trying to stay on track. Other than this specific chia seed pudding recipe being incredibly tasty, the best thing about this recipe is that it is SO easy to make.

It is also a great base for almost any kind of pudding you’re in the mood for – my current favorite combo is adding fresh raspberries and blueberries.

Ingredients

  • 2 cups almond milk
  • ½ cup chia seeds
  • ½ teaspoon vanilla extract
  • 1 – 2 tablespoons Agave (you can use your favorite sweetener ex. honey, maple syrup)
  • Your favorite fruit!

Recipe

This makes about three servings and lasts up to 5 days in the fridge. 

1.     Combine the almond milk, chia seeds, vanilla and sweetener in a bowl. Mix well until combined and the mixture begins to thicken. Cover with plastic wrap and place in the refrigerator for at least an hour. (The longer it is left in the fridge the thicker the mixture becomes)

2.     Stir before serving and add some water if the mixture is too thick.

Optional: Before I get my chia seed pudding snack ready I place some raspberries in the bottom of my cup/bowl and crush them up. After I soup a few spoonfuls of pudding on top and garnish with a few raspberries and blueberries. The raspberries on the bottom are a great sweet surprise!
