BBQ Chicken Pizza
Pizza is very, very near and dear to my heart. I mean seriously what’s not to love? Cheese – Good, Bread – Good, Pancetta – GOOD! I could go on but instead I’ll just share with you one of my favorite pizza recipes.
Lets begin with the dough. Everyone always asks me if I make my own pizza dough or if I buy it. 99% of the pizzas I make are with store bought pizza dough. As much as I’d love to make fresh dough every week (because yes, I have pizza every Friday) it takes so much time and effort to make your own dough. My favorite dough is made by the Portland Beer Company. They have many different flavors from garlic to wheat to everything and even beer. When the dough makes the beautiful transition into pizza crust I’ve found that this specific dough puffs up and creates a beautifully golden crust on the outside while staying pretty light and fluffy on the inside. If your local grocery store doesn’t carry this brand I definitely recommend testing out the different dough options you have available until you find one you like best!
One of my personal favorites and most prized pizzas is BBQ Chicken. It’s almost certainly the number one requested pizza from my boyfriend and family. Don’t feel like you need to follow the recipe exactly, I love spicy food and add a little extra spice everywhere I can.
BBQ Chicken Pizza
Recommended Supplies
- Parchment paper
- Pizza peal
- Pizza Stone
- Rolling Pin
- Non-stick Pan
Ingredients:
- 1 dough
- 1.5 Chicken Breasts
- Your Favorite BBQ sauce
- BBQ Seasoning
- ¼ a Red Onion
- Green Onion
- 1 cup Mozzarella Cheese
- 1 cup Cheddar cheese
- ½ a jalapeno
- flour
- Parmesan cheese
- Optional: ½ a package of pancetta – because pancetta takes everything up a notch!
Recipe:
1. If you don’t already have a pizza stone… BUY ONE.

2. Preheat your oven as high as it can go (mine goes up to 550 degrees).
3. Cut your chicken breast into small cubes and sprinkle with the BBQ seasoning.
4. Throw some flour on your counter, place the dough on the flour and sprinkle a little flour on top. Begin rolling the dough out with the rolling pin. You can switch between using the rolling pin and stretching the dough out with your hands until you get the desired size of your pizza.
5. Place a piece of parchment paper on to your pizza peel before you put the dough on top. This will help with clean up and help you get your pizza in and out of the oven with ease.
6. Heat your non-stick pan on medium heat, spray on some olive oil, place the seasoned chicken in the pan and cook. Once cooked drizzle some BBQ sauce on the chicken so it has a light, even coat.
7. Slice the red and green onions, and jalapeno.
8. Sprinkle some BBQ seasoning directly on to the dough
9. Drizzle your BBQ sauce onto the dough and spread into the dough so it is evenly distributed. Note: I like to spread the sauce all the way to the edge of the dough so when you roll the crust back you have a hint of BBQ sauce in the crust.
10. Sprinkle the mozzarella and cheddar cheese mixture on top of the BBQ sauce.
11. Add the cooked chicken on top of the cheese, followed by the red onion, jalapeño and pancetta.
12. If you want puffy crust that is crunchy on the outside and fluffy on the inside I recommend that you just fold over the crust instead of rolling it.
13. Before I put the pizza in the oven I like to sprinkle some parmesan cheese on top of the crust.
14. Place in the oven for 12-15 minutes (or until as crisp as you prefer)
15. Remove from the oven and sprinkle the green onion on top of the pizza.
16. Slice and serve hot!
